Whole Wheat Dinner Rolls w/ pictures

Whole Wheat Dinner Rolls

2 packages (1/4 oz each) active dry yeast
2-1/4 cups warm water (110-115)
1/4 cup shortening
2 eggs
1/2 up plus 1 Tablespoon sugar
2 teaspoons salt
3 cups whole wheat flour
3-1/2 to 4 cups all-purpose flour
1/4 cup butter or margarine, melted

In a large mixing bowl, dissolve yeast in warm water; let stand for 5 minutes.  Add he shortening, eggs, sugar, salt and whole wheat flour; beat until smooth.  Add enough all-purpose flour to form a soft dough.  Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.  Place in a greased bowl, turning once to grease top.  Cover and let rise in a warm place until doubled, about 1 hour.  Punch dough down.  Divide into four portions; shape each into 12 balls.  Place 1 in. apart on greased baking sheets.  cover and let rise until doubled, about 25 minutes.  Bake at 375 for 11-15 minutes or until browned.  Brush with butter.
Yield 4 dozen.

Now here's how I started.  Let's see how I finish.

First step.  Getting everything ready and laid out.

Mixing all that flour in.  Notice the spoon... I started adding
the whole wheat with my hand mixer.  As I started adding the white
flour the traitor died on me.  So............... the spoon and I finished mixing.


 Finally done mixing and kneading.  So didn't want to show you the
big flour mess I made!  So here it is getting ready to set and double.

Okay waiting is finally done.  Here are the last steps!

Rolled up 2 dozen balls to rise.  Rolled up 2 dozen to freeze for later!!!


Finished rolls.  Delicious and healthy (remember the whole wheat)!
